Yum Yum Yum Yum Yum. Delicioso!

Two of my parents share the same birth-week, so to celebrate I made this cake. I didn't have any strawberry jam, so I used apricot, and it turned out great. The only change I would make next time would be to more generously frost/fill the layers. I didn't want the outside to be half-naked, and my paranoia was ill-founded. There was plenty of the fabulous stuff to go around, and now I have a cup or so left for spreading on toast. I'm pretty sure it is the most delicious frosting I have ever eaten in my entire life. Thanks for the recipe, Liz.

If you click on "this cake" it is a hyperlink to the whole recipe for cake and icing. Here's a little preview:

butter, cream cheese, jam, powdered sugar, and whipped cream folded in. rich but light. fabulous.

I don't want you to think I only like you for your cooking, but may I come and visit until the cake is gone, please?

It really does look amazingly good, Jen! When you first showed me the recipe and picture, I didn't think there was any possible way to improve on the original.

But I think the apricot jam (instead of the previous chef's strawberry) is just the right touch. It looks like a wonderful cake eating experience. :)

so i offered to make it for dessert on sunday (in the peach variety) and my mom gave me a disappointed "oh." then, i told tom that story and he told me "it isn't my favorite thing you make." that is a strong insult from my man. what are they thinking. i may just make it anyway and i will bring whatever i don't eat over to you.

And um, what IS the best thing you make? (In Tom's opinion, of course.) And what would your mother have preferred?

Inquiring minds want to know... and they'd like you to post the recipes, too, please?

It sounds so yummy. I don't much like cake, unless it is heavy (check,) filled (check,) and has a really tasty icing (check.)

I don't know what's wrong with Dansie Family's mom and husband. (But maybe I should taste the cake before I form an opinion.)

You've got to stop doing this to a woman counting stupid points!

The cake looks delicious! I'm sure your parents loved it.

Also, the poem you posted in your latest post is hilarious!
