Two of my parents share the same birth-week, so to celebrate I made this cake. I didn't have any strawberry jam, so I used apricot, and it turned out great. The only change I would make next time would be to more generously frost/fill the layers. I didn't want the outside to be half-naked, and my paranoia was ill-founded. There was plenty of the fabulous stuff to go around, and now I have a cup or so left for spreading on toast. I'm pretty sure it is the most delicious frosting I have ever eaten in my entire life.
