Caramel Day

It was finally dry enough today to make caramels. So I did. Yaaaaaaay! I also dipped pretzel sticks in the caramel, and I intend to drizzle something or other over them, too. A little lesson I learned last year: DO NOT put hot caramel dipped pretzels on waxed paper to cool—unless you like the taste of waxed paper mixed with caramel and pretzels.

My fingers have been severely burned in several places, so sympathy is appreciated.




The best part of making caramels: Licking everything in caramel-covered sight afterwards.

No caramel on a cloudy day, huh? Point taken. I have only made caramels once and they didn't really turn out. Now I'm sure I know why.

Oh, and I'm sorry you burned your fingers. Ouch.

yum! i might actually attempt truffles this year because i have cute christmas candy papers that i never use. i have always wanted to do the pretzels, too. maybe next year. what did you sprinkle?

Since that isn't waxed paper beneath the pretzel rods, what is it?

It's a long standing family tradition that when one burns oneself in the process of creating something, said something automatically becomes a masterpiece. So, congrats on the masterpieces. They look yum yum delicious.

Darn! I wanted to call you to make caramel in a couple of days! They look delicious. I remember our waxy lesson last year, it was fun to eat all the mess ups.
Did your heavy duty enameled cast iron pot work fabulously for you? I bet you had a huge smile while making caramels this year.
Oh, condolences on being a burn victim, but I am glad you survived!

I am so glad you chose this subject to post about...now I am going to pick your brain! I need all the amazingly wonderful tips you can think of, I was planning to dip pretzels in caramel then chocolate for gifts, but lets face it I am very inexperienced in this area so any info you can offer would be great!! some answers to the following would be great :) do you have to store them in the refrigerator to cool? it looks like you placed them on tin foil? also what is the best way to dip them? Thanks so much!! They look deish! and sorry about your fingers :)

Aunty, if you click on the first "caramel" it will take you to the recipe I use.

Kasey, I spray tin foil with cooking spray and let them cool on the counter on the foil. I don't refrigerate them, because candy is usually sensitive to humidity and temperature, though caramel is usually fine in the cold.

It's best to dip them while the caramel is very hot, hence my burned fingers. I did decide toward then end that the best method was to spoon sheets of hot caramel over them, and let it drip off a little. Good luck! I'm in the phone book if you need me. If you drizzle chocolate, call me and I'll help you not make the same mistakes I did.

yum! i ate them last night and i was so rude and would only let my brother have half of one. we had christmas treats for dessert and yours were the hottest item.
