Mmmmm, Spinach!

I have been having a weird craving, and this recipe is the result. Don't knock it until you have tried it.

1 Tbsp Butter
Fresh squeezed lemon juice
A splash of apple juice
Spinach
Salt, Pepper

Heat up the first three ingredients over medium heat, then add the spinach. Salt and pepper to taste. This dish looks gross, but it is so delicious. And nutritious!

That does sound good! I have a recipe in which you saute the spinach for a short time, then add a little chicken broth and sliced oranges, mmmm. I also like to just cook it in a little olive oil then add soy sauce and sesame seeds. I do that all summer with chard from my garden and eat it with a poached egg for breakfast. We also like to make spinach smoothies. Now I want some spinach and I don't have any. Enjoy and keep eating healthy for that baby's brain!
